Vegetable Stock
For 3.75 ltr.
Ingredients
- vegetable oil : 60 ml.
- Onions, sliced : 115 gm.
- Leeks, green and white parts, chopped : 115 gm.
- Celery chopped : 115 gm.
- Green cabbage, chopped : 55 gm.
- Carrots chopped : 55 gm.
- Turnips, chopped : 55 gm.
- Tomatoes , chopped : 55 gm.
- Garlic cloves, crushed : 3 EA.
- Cold water : 4.25 ltr.
- Sachet d’epices : 1 EA.
- Fennel seeds : 1 Tsp.
- Whole cloves : 3 EA.
Method
- Heat the oil.
- Add the vegetables and sweat them for 3-5 minutes.
- Add water and sachet d’epices and simmer for 30-40 minutes.
- Strain the stock.
