Cole slaw Salad
For 4 portions
Ingredients
- Mayonnaise, Natural Yoghurt – 125ml.
- White or Chineese cabagge – 200gms.
- Carrot – 50gms.
- Onion (Optional) – 25 gms.
Method
- Trim off the outside leaves of the cabbage. Cut into quarters.
- Remove the center stalk. Wash the cabbage, shred finely and drain well.
- Mix with a fine julienne of raw carrot and shredded raw onion.
- To lessen the harshness of raw carrot, blanch and refresh.
- Bind with mayonnaise sauce or natural yoghurt.
Basic & Balsamic Vinaigrette
For 1 ltr.
Ingredients
- Vegetable oil : 720 ml.
- Vinegar : 240 ml.
- Salt, pepper : To taste.
- Colemans mustard, dry : 1/2 tsp.
- Herbs, chopped : 1/2 tbsp.
- Sugar (optional) : 1/2 tsp.
Method
- Combine all the ingredients and whip them until they are thoroughly blended.
- Taste the vinaigrette and adjust the seasonings to finish.
Balsamic Vinaigrette
Use balsamic vinegar 190 ml. and increase the oil to 780 ml. Extra virgin olive oil or any nut oil used gives a good result.

- Vinegar : 45 gm.
- Salt, pepper and French mustard.
English
- Oil : 30 gm.
- Vinegar : 60 gm.
- Salt, pepper and English mustard.
French
- Oil : 70 gm.
- Vinegar : 20 gm.
- Salt, pepper and French mustard.
Italian
- Oil : 70 gm.
- Vinegar : 20.
- Salt, pepper, oregano and crushed garlic
Method
Before service mix all the ingredients and mix well.
