Waldorf Dressing

For 10 portion.

Ingredients

  1. Mayonnaise   : 100 gm.
  2. Cream   : 30 gm.
  3. Lemon juice   : 2 tsp.
  4. Honey   : 2.5 tbsp.
  5. Seasoning   : To taste

Method

  • Mix all the ingredients well.
  **  Waldrorf Salad – By adding dices of apples, finely chopped celery and finely chopped walnut to the waldor dressing.

Thousand Island Dressing

For 1 ltr.

Ingredients

  1. Pimentos, chopped   : 90 gm.
  2. Capsicum, chopped   : 90 gm.
  3. Parsley, chopped   : 1 tbsp.
  4. Egg, hard boiled, chopped   : 4 EA.
  5. Tabasco   : 2-3 dashes.
  6. Vinegar   : 1 tbsp.
  7. Mayonnaise   : 850 ml.
  8. Tomato ketchup   : 90 ml.
  9. Seasoning   : To taste.

Method

  • Place mayonnaise in a mixing bowl. 
  • Add all the ingredients.
  • Mix them well.
  • Correct seasoning.
  • Chill until use.

Ranch Dressing

For 10 portions

Ingredients

  1. Mayonnaise   : 100 gm.
  2. Sour cream   : 30 gm.
  3. Butter milk   : 15 gm.
  4. Red wine vinegar   : 15 gm.
  5. Worcester sauce   : 1 tsp.
  6. Parsley, chopped   : 1 tblsp.
  7. Shallots, chopped   : 1 tblsp.
  8. Chives, chopped   : 1 tblsp.
  9. Mustard, dijon   : 1 tsp.
  10. Salt and pepper   : To taste.

Method

  • mix all the ingredients and mix well.

Green Goddess Dressing

For 1 ltr.

Ingredients

  1. Spinach leaves   : 90 gm.
  2. Watercress leaves   : 90 gm.
  3. Parsley leaves, fresh   : 1 tbsp.
  4. Tarragon leaves, fresh   : 1 tbsp.
  5. Garlic cloves, mashed   :1EA.
  6. Vegetable oil   : 150 ml.
  7. Mayonnaise   : 400 ml.
  8. Prepared mustard   : 1 tbsp.
  9. Seasoning   : 1/2 tsp.
  10. Lemon jiuce   : 45 ml.

Method

  •  Puree the spinach, watercress, parsley, tarragon and garlic with the oil.
  • In a food processor, combine the puree with the mustard and mayonnaise.
  • Add the seasoning and lemon juice to taste.
  • Refrigerate the dressing immediatly.

Caesar Dressing

For 1 ltr.

Ingredients

  1. Egg yolks   : 3 EA .
  2. Parmesan grated   : 60 gm.
  3. Garlic minced   : 2 tsp.
  4. Anchovy paste   : 25 gm.
  5. Lemon juice   : 25 ml.
  6. Black pepper crushed   : To taste.
  7. Worcestershire sauce   : 1 tsp.
  8. Vinegar white wine   : 15 ml.
  9. Vegetable oil   : 240 ml.
  10. Salt   : To taste.

Method

  • Place egg yolks in a bowl and mix well until creamy.
  • Add oil slowly while beating and emulsion starts to form.
  • Continue adding the oil in a slow stream until you have all the oil in it.
  • Add the rest of the ingredients and adjust the seasoning.
  • Chill dressing until final use.

Blue Cheese Dressing

Ingredients

  1. Blue  cheese, crumbled   : 340 gm.
  2. Basic mayonnaise   : 480 ml.
  3. Sour cream   : 240 ml.
  4. Butter milk  : 180 ml.
  5. Milk   : 90 ml.
  6. Lemon juice   : 1 tbsp
  7. Worcestershire sauce   : 45 ml.
  8. Garlic, mashed   : 1/4 tsp.
  9. Seasoning   : 1/2 tsp.

Method

  • Combine the ingredients and mix them to a smooth consistency.
  • Adjust the seasoning to taste.
  • Chill the dressing untill it is needed.
