Waldorf Dressing
For 10 portion.
Ingredients
- Mayonnaise : 100 gm.
- Cream : 30 gm.
- Lemon juice : 2 tsp.
- Honey : 2.5 tbsp.
- Seasoning : To taste
Method
- Mix all the ingredients well.
** Waldrorf Salad – By adding dices of apples, finely chopped celery and finely chopped walnut to the waldor dressing.
Thousand Island Dressing
For 1 ltr.
Ingredients
- Pimentos, chopped : 90 gm.
- Capsicum, chopped : 90 gm.
- Parsley, chopped : 1 tbsp.
- Egg, hard boiled, chopped : 4 EA.
- Tabasco : 2-3 dashes.
- Vinegar : 1 tbsp.
- Mayonnaise : 850 ml.
- Tomato ketchup : 90 ml.
- Seasoning : To taste.
Method
- Place mayonnaise in a mixing bowl.
- Add all the ingredients.
- Mix them well.
- Correct seasoning.
- Chill until use.
Ranch Dressing
For 10 portions
Ingredients
- Mayonnaise : 100 gm.
- Sour cream : 30 gm.
- Butter milk : 15 gm.
- Red wine vinegar : 15 gm.
- Worcester sauce : 1 tsp.
- Parsley, chopped : 1 tblsp.
- Shallots, chopped : 1 tblsp.
- Chives, chopped : 1 tblsp.
- Mustard, dijon : 1 tsp.
- Salt and pepper : To taste.
Method
- mix all the ingredients and mix well.
Green Goddess Dressing
For 1 ltr.
Ingredients
- Spinach leaves : 90 gm.
- Watercress leaves : 90 gm.
- Parsley leaves, fresh : 1 tbsp.
- Tarragon leaves, fresh : 1 tbsp.
- Garlic cloves, mashed :1EA.
- Vegetable oil : 150 ml.
- Mayonnaise : 400 ml.
- Prepared mustard : 1 tbsp.
- Seasoning : 1/2 tsp.
- Lemon jiuce : 45 ml.
Method
- Puree the spinach, watercress, parsley, tarragon and garlic with the oil.
- In a food processor, combine the puree with the mustard and mayonnaise.
- Add the seasoning and lemon juice to taste.
- Refrigerate the dressing immediatly.
Caesar Dressing
For 1 ltr.
Ingredients
- Egg yolks : 3 EA .
- Parmesan grated : 60 gm.
- Garlic minced : 2 tsp.
- Anchovy paste : 25 gm.
- Lemon juice : 25 ml.
- Black pepper crushed : To taste.
- Worcestershire sauce : 1 tsp.
- Vinegar white wine : 15 ml.
- Vegetable oil : 240 ml.
- Salt : To taste.
Method
- Place egg yolks in a bowl and mix well until creamy.
- Add oil slowly while beating and emulsion starts to form.
- Continue adding the oil in a slow stream until you have all the oil in it.
- Add the rest of the ingredients and adjust the seasoning.
- Chill dressing until final use.
Blue Cheese Dressing
For 1 ltr.
Ingredients
- Blue cheese, crumbled : 340 gm.
- Basic mayonnaise : 480 ml.
- Sour cream : 240 ml.
- Butter milk : 180 ml.
- Milk : 90 ml.
- Lemon juice : 1 tbsp
- Worcestershire sauce : 45 ml.
- Garlic, mashed : 1/4 tsp.
- Seasoning : 1/2 tsp.
Method
- Combine the ingredients and mix them to a smooth consistency.
- Adjust the seasoning to taste.
- Chill the dressing untill it is needed.
