For 4 Servings

Ingredients

  1. Butter   : 60 gm.
  2. Onion, chopped   : 30 gm.
  3. Celery, chopped   : 30 gm.
  4. Carrot, chopped   : 30 gm.
  5. Bacon, diced ( optional )   : 60 gm.
  6. Bay leaf   : 1 No.
  7. Ground beef   : 300 gm.
  8. Red wine   : 125 ml.
  9. Porcinni, chopped   : 1 tbsp.
  10. Salt & ground pepper   : 1 tbsp.
  11. Nutmeg, grated   : A pinch.
  12. Beef stock   : 125 ml.

Method

  • Melt butter in a pan & saute onion, celery, carrot, bayleaf, chopped bacon for 10 minutes.
  • Add the ground beef & cook till golden brown.
  • Add wine to it & cook till liquid is reduced.
  • Add porcinni & season .
  • Add nutmeg & stock simmer for one and half hours.
  • Finish the sauce till reduced & adjust the seasoning.
  • Serve for lasagne.

Note : If we serve bolognaise as a sauce we add tomato puree to it.

Ingredients

  1. Porcinni mushrooms ( sliced )   : 30 gm.
  2. Olive oil   : 1 tbsp.
  3. Onion, chopped   : 30 gm.
  4. Garlic, chopped   : 2 EA.
  5. Tomato concasse   : 200 gm.
  6. Chilli flakes   : 1/4 tsp.
  7. Penne ( pasta)   : 450 gm.
  8. Pecorina cheese   : 85 gm.
  9. Butter   : 45 gm.

Method 

  • Heat oil, saute onion and garlic gently for 5 minutes.
  • Add bacon and saute.
  • Add porcini, tomatoes and chilli flakes and simmer until thick and rich .
  • Season to taste.
  • Add  pasta – toss, sprinkle cheese and serve.
