Bolognaise
For 4 Servings
Ingredients
- Butter : 60 gm.
- Onion, chopped : 30 gm.
- Celery, chopped : 30 gm.
- Carrot, chopped : 30 gm.
- Bacon, diced ( optional ) : 60 gm.
- Bay leaf : 1 No.
- Ground beef : 300 gm.
- Red wine : 125 ml.
- Porcinni, chopped : 1 tbsp.
- Salt & ground pepper : 1 tbsp.
- Nutmeg, grated : A pinch.
- Beef stock : 125 ml.
Method
- Melt butter in a pan & saute onion, celery, carrot, bayleaf, chopped bacon for 10 minutes.
- Add the ground beef & cook till golden brown.
- Add wine to it & cook till liquid is reduced.
- Add porcinni & season .
- Add nutmeg & stock simmer for one and half hours.
- Finish the sauce till reduced & adjust the seasoning.
- Serve for lasagne.
Note : If we serve bolognaise as a sauce we add tomato puree to it.
Arabiata Sauce

For 4 Portions
Ingredients
- Porcinni mushrooms ( sliced ) : 30 gm.
- Olive oil : 1 tbsp.
- Onion, chopped : 30 gm.
- Garlic, chopped : 2 EA.
- Tomato concasse : 200 gm.
- Chilli flakes : 1/4 tsp.
- Penne ( pasta) : 450 gm.
- Pecorina cheese : 85 gm.
- Butter : 45 gm.
Method
- Heat oil, saute onion and garlic gently for 5 minutes.
- Add bacon and saute.
- Add porcini, tomatoes and chilli flakes and simmer until thick and rich .
- Season to taste.
- Add pasta – toss, sprinkle cheese and serve.
