Beef Consomme
For 25 portions
Ingredients
- Onion brulee : 1 EA.
- Mirepoix : 450 gm.
- Minced meat : 1.4 kg.
- Egg whites(beaten) : 10 EA.
- Tomatoes, chopped : 340 gm.
- Beef Stock : 4.75 ltr.
- Sachet d’epices : 1 EA.
- Cloves, whole : 1 EA.
- White pepper : 1 tsp.
Method
- Mix all the ingredients for clarification and blend with the stock , mix well.
- Bring the mixture to a slow simmer .
- Stiring frequently until the raft forms.
- Add the sachet d’epices .
- Simmer for 45 minutes or appropriate flavour and clarity are achived.
- Baste raft occassionally
- Strain the consomme and adjust the seasoning.
